Meals of the Week
Breakfasts:
Scrambled Eggs + Chocolate Croissant
Melt butter in a pan, then crack in your eggs. Stir gently until eggs are cooked, then top with shredded cheese, salt, pepper, and ketchup. Serve with fruit and chocolate croissant.
Breakfast Sandwich
Fry bacon in a pan until crispy. In a separate pan, melt butter and crack in 1-2 eggs. Fry egg(s) until cooked, remove from pan, and season with salt and pepper. Toast an English muffin and then add mashed avocado to one half, and butter to the other half. Add the fried egg(s), a slice of cheese, and the bacon. Serve with a side of fruit.
Feta Eggs + English Muffin + Donut Peach
Melt butter in a pan, then add feta cheese. Let the cheese melt slightly, then crack in your eggs. Cook eggs for 3-5 minutes, then flip and cook for one more minute. Remove eggs from pan, and top with hot sauce. Serve with fruit and toast/english muffin.
Lunches:
Barros Pizza - BBQ Chicken Pizza + Honey Hot Wings
Ramen
Add Ramen Broth and grated garlic to a pot and bring to a simmer. Add wood ear mushrooms, chopped green onion, Korean red pepper flakes (gochugaru) and shiratake noodles (or ramen noodles) and simmer for 5 minutes. Pour the ramen into a serving bowl. In a separate pot, bring water to a boil, add in an egg, and boil for 6 minutes. Peel the egg and then cut in half and add to the ramen bowl. Top with pork belly (optional), sesame seeds, and more green onion, and serve with kimchi.
Dinners:
Honey Garlic Soy Salmon, Rice & Broccoli
For the salmon: Preheat oven to 375. Place salmon on a foil lined baking sheet. In a bowl, combine: 1/4 cup soy sauce, 1/4 cup honey, 3 minced garlic cloves, 2 teaspoons minced ginger, 1 tablespoon gochugaru (Korean red pepper flakes), 2 teaspoons rice vinegar, and a pinch of salt. Mix together then brush on top of salmon. Bake salmon for 10-12 minutes, or until salmon has reached your desired doneness.
For the rice: Add 2 cups of rice to a rice cooker. Wash and rinse until the water runs clear, then add 3 cups of water, and cook in the rice cooker on the white rice setting.
For the broccoli: Bring one cup of water to boil in a pot. Add broccoli florets to a steamer insert and place into the pot. Cover and let steam for 7 minutes, then remove steamer insert and season with salt and butter/ghee.

Chomps Jalapeno Beef Sticks - I’m trying to up my protein and lower my sugar throughout the day, so these beef sticks are perfect! They’re 10 grams of protein and no added sugar so win win!

In the past, I struggled with an eating disorder, and I would “avoid” certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others, and it’s okay if there’s more of you to love than when you were younger ;)
