Recipe of the Week
Iced White Mocha
1-2 tbsp white chocolate sauce
Double shot of espresso
6 ounces 2% milk
Ice
Whipped cream
Shop all the ingredients HERE!
Instructions:
Add 1-2 tbsp White Chocolate Sauce to a cup, and brew 2 shots of espresso over the top. (See my 5 Ways To Make Espresso At Home blog post on my website for step by step instructions of various at home espresso making methods)!
Stir until the sauce is fully dissolved then add in your choice of milk, add ice, and top with whipped cream.

This Week’s Eats
High Protein Bagel & Cottage Cheese
Toast a Dave’s Killer Bread blueberry bagel and top with cottage cheese.
Korean Gochujang Mandu Soup
1 small shallot, finely chopped
3 cloves garlic, finely chopped
1 tablespoon salted butter
1/2 cup cabbage, chopped
2 carrots, chopped
1/2 small zucchini, chopped
1 serving frozen mandu (korean dumplings)
2 cups beef bone broth
1 tablespoon gochujang
pinch of salt
2 green onions, chopped
To a pot add butter, garlic, and shallot. Cook until fragrant (about 1 minute), then add in the gochujang, beef bone broth, cabbage, carrots, and zucchini. Stir to combine, and then bring to a boil. Add in the frozen mandu, and boil for 6 minutes. Garnish with chopped green onion, and serve! Serve with Trader Joes Pork Belly (optional).
Gochujang Marinated Chicken
In a small bowl combine 2 tablespoons gochujang, 1 teaspoon sesame oil, 1/2 tablespoon maple syrup or honey, 2 teaspoons rice vinegar, and 1/2 tablespoon lime juice. Mix to create a paste, and set aside. Add avocado oil to a pot or pan, then add in chicken thighs. Cook for 4-6 minutes, then flip and cook for 4-6 more minutes. Add the gochujang paste over the chicken, then cover with a lid, and cook for 3-4 more minutes. Turn off the heat, remove the pot or pan from the burner, and let the chicken rest for 10 minutes before serving. Serve the chicken with edamame (seasoned with lime juice, sea salt, and gochugaru), and carrot salad (cut carrots into ribbons, then season with salt or soy sauce, lime juice, sesame oil, rice vinegar, maple syrup, and sesame seeds).

Nespresso VertuoPlus Machine- I’ve had this baby for well over two years, and this is the first time I’ve actually used it consistently (twice a day) to make coffee! I have been on a brewed coffee kick so I’m running with it! I love brewing a Melozio pod (or a decaf melozio pod in the evenings) with my Homemade Brown Sugar Syrup or my Homemade Pistachio Syrup and some heavy cream!
Dr. Pepper Creamy Coconut Zero Sugar- This is a new flavor from Dr. Pep and I’m in love! I drink it with True Lime and Torani Sugar Free Mango Syrup and I look forward to it every day!
True Grapefruit and True Orange! I’ve been a fan of True Lime in my drinks for over a year now, but I finally tried True Grapefruit and True Orange and I absolutely love both!
Simple Modern 40 oz Tumbler- I loveeee this cup! It’s 40 ounces so it holds a ton of liquid, and it comes in all different colors. I use it daily for my dirty sodas and sparkling water concoctions!
JavaSok Nalgene Style BotlSok- I had been complaining that none of my JavaSoks fit my big 32 ounce wide mouth mason jar, but I recently discovered the Nalgene Style JavaSoks do fit these jars, so I bought one and I’m in love!
Thank you SO SO MUCH for reading this week’s newsletter! This newsletter is simply a way for me to share my recipes, and my love for coffee and food! In the past, I struggled with an eating disorder, and I would “avoid” certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others, and it’s okay if there’s more of you to love than when you were younger ;)
