Starbucks Pink Drink - Copy Kat Recipe
🌷4 ounces (1/2 cup) white cran-strawberry juice
🌷4 ounces (1/2 cup) white grape juice
🌷1 tsp acai powder
🌷1 scoop green coffee bean powder (optional but adds a caffeine boost)
🌷4 ounces (1/2 cup) coconut milk
🌷Freeze dried strawberries
🌷Ice
This is for a venti size- do half of everything for a grande :)

Coffees & Meals of the Week
Coffees/Drinks:

Iced White Mocha - My copy Kat Starbucks recipe (I’ve been using goat milk instead of cow’s milk and coconut whipped cream instead of regular)
Mango Green Tea - I came across this collagen protein powder from Boba Tea Protein and holyyyy buckets I am in love! It’s basically a boba tea (minus the boba pearls) with 10 grams of protein, and less than 1 gram of sugar! I definitely recommend trying it out if you’re a boba fan looking to drink something with more protein and less overall sugar!
Diet Coke + True Lime - if you haven’t tried diet coke with true lime, oh my gosh beckyyyy you are missing out!!! I’m hooked, and I got my husband hooked. Ya need to try it; I promise it takes diet coke (or any soda or water) to the next level!
Sanzo Sparkling Waters - I am HOOKED on these! I love the mango, yuzu with ginger, pomelo, and lychee flavors. The only one I wasn’t crazy about was the calamansi flavor. These are asian inspired sparkling waters that have no added sugar, and have really simple ingredients! Find them on Amazon or at Sprouts!
Banana Milk Latte - I tried banana milk for the first time last week and I’m in love! I got lots of requests to make a coffee recipe with it, so check out the recipe HERE!
Breakfasts:
Fried Eggs + Bacon + Crispy Potatoes
Thinly slice baby potatoes into rounds - the thinner the better. Heat 1/4 cup avocado oil in a pan on medium to low heat. Add in the sliced potato rounds and fry until golden brown on both sides (about 6-10ish min). Remove crispy potato rounds from the pan, and place on a paper towel lined plate to allow excess oil to drip. Season potatoes with salt, pepper, garlic powder, onion powder, and chili powder. Heat a pan to medium heat, add bacon, and cook until crispy. Remove bacon from pan, and place on a paper towel lined plate to allow excess grease to drip. To the same pan, crack in two eggs. Cover with a lid and cook for 2-4 minutes, or depending on your preference. Remove eggs from pan, and place on a plate. Season the fried eggs with salt, pepper, and Frank’s Red Hot Sauce. Add potatoes and bacon to the plate along with 1/4 avocado and orange slices.
Fried Eggs + Oatmeal + Blueberries
Add avocado oil to a pan and bring to low/medium heat. Crack in two eggs, then cover with a lid and cook for 2-4 minutes, or depending on your preference. Remove eggs from pan, and place on a plate. Season the fried eggs with salt, pepper, and Frank’s Red Hot Sauce. To a bowl, add one packet of instant oatmeal (I had maple & brown sugar from Walmart) and 2/3 cup water. Microwave for 1-2 minutes then stir. Add blueberries to a bowl/plate and serve with the eggs and oatmeal.
Lunches:
Tuna Sushi Bowls
To a bowl, combine 1/2 can of tuna (drained), 1 tbsp avocado oil mayo, and 3 tbsp sriracha. Mix well and flatten down in the bowl. Top with sliced avocado, sliced, cucumber, kimchi, and sesame seeds. Serve with seaweed snacks.
Dinners:
Shrimp Pho - Loosely followed this recipe. This was my first time making this and Gabriel and I loved it!!!
The substitutions I made - I used Kettle & Fire Lemongrass & Ginger Beef Bone Broth and then I used gochujang instead of red chili paste and then no cinnamon stick. I used shrimp for the protein.
Butter Chicken Curry + Lentils - SUCH a great meal prep recipe!
Salmon + Sweet Potato + Broccoli
Preheat oven to 400 degrees. Poke holes all over the sweet potato with a fork. Rub avocado oil all over the sweet potato then place on a baking sheet and bake at 400 for 60 minutes (flipping halfway). Pat dry salmon and season with salt, garlic powder, and dried dill weed. Spray air fryer with avocado oil spray, add the salmon and air fry for 8-10 minutes at 350. For the broccoli, bring a small pot with water to a boil, add in a steamer insert, add the broccoli and cover with a lid. Steam for 6-7 minutes then remove lid, and drain the water. Season steamed broccoli with salt, garlic powder, and onion powder. To plate, add a sweet potato - season with a pad of butter and a sprinkle of salt. Add the air fried salmon with a squeeze of lemon juice, and add the broccoli.
Snacks
Power Crunch Protein Bar - I have really been liking these lately! So far I love the coconut cream flavor, lemon meringue, double chocolate, chocolate mint, and chocolate coconut!

Doom at your Service - Liked it a lot, but didn’t love it. I found the metaphors to be super confusing throughout the show, buttttt I did enjoy the story line, I loved the main and second leads, and I did like the ending. All around pretty good, just not my fav and probs not one I’d watch again.
See You in My 19th Life - I’m already halfway through this show and I love it! Definitely recommend watching :)

Things I’m Lovin Lately
True Lime - Duhhh! I refuse to drink water or diet coke without it. It is SO DANG GOOD! I add 2-3 packets to water or diet coke, and I’m not kidding when I say, finding true lime was the best thing that ever happened to me. I LOVE IT! Also, they don’t have any sugar or sugar alcohols, it’s just crystallized lime!

My Walking Pad - I work from home so I don’t get in much movement unless I do intentional exercise. I’ve been whipping out my walking pad and raising my desk to get in extra steps while working during the day, and I feel so productive. I just keep the speed low (around 1.0 - 1.4) so I can type and work on the computer and I’ve been averaging over 10,000 steps each day!!
This newsletter is simply a way for me to share my recipes, and my love for coffee and food! In the past, I struggled with an eating disorder, and I would “stay away” from certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others.
