Egg & Veggie Snack Plate
2 boiled eggs, ranch, raw veggies: broccoli, cucumber, cherry tomatoes, baby carrots, and Protein chips
KBBQ Chicken + Rice + Steamed Broccoli (see recipe below under Dinners)
Chick Pea Salad
Add 1/2 cup chick peas, 1/2 cup feta crumbles, 1/4 cup chopped green olives, a big handful of chopped cherry tomatoes, and 1/2 teaspoon red wine vinegar to a bowl. Stir to mix everything together and enjoy!
Kimchi Stew + rice
Dinners:
Steak + Mashed Potatoes + Steamed Asparagus
For the steak: Preheat oven to 375. Season steak with salt and pepper. Heat a pan to medium heat and add avocado oil. Add steak to the pan and cook for 3 minutes, or until steak develops a nice crust, then flip and add in salted butter and fresh rosemary. Cook for another 3 minutes, and then place the entire pan in the preheated oven, and cook for 5 more minutes, or until steak has reached your desired doneness. Remove steak from pan and let sit on a plate or cutting board for 5-10 minutes before slicing.
For the mashed potatoes: Cut baby potatoes into quarters and add to a pot. Fill the pot with water and bring to a boil. Boil potatoes for 10 minutes or until fork tender, then drain the water. Mash the potatoes with a potato masher, and then add milk, butter and salt to taste.
For the asparagus: Bring one cup of water to boil in a pot. Add asparagus to a steamer insert and place into the pot. Cover and let steam for 7 minutes, then remove steamer insert and add the asparagus to the pan that you cooked the steak in. Mix steamed asparagus around in the butter and rosemary mixture, and add more salt if desired.
KBBQ Chicken + Rice + Steamed Broccoli
Add chicken tenderloins to a ziplock bag and add KBBQ marinade (I bought this one). Seal the bag, mix the chicken around in the marinade, then let sit in the fridge for 1-24 hours. Add rice and water to a rice cooker and cook on your desired setting. Once rice is almost done cooking, add avocado oil to a pan, and add marinated chicken tenderloins. Cook for 2-4 minutes per side, or until fully cooked through, then remove chicken from pan. For the broccoli, bring 1 cup of water to a boil in a pot, then add broccoli florets to a steamer insert, and add the insert to the pot. Cover with a lid, and let broccoli steam for 6-8 minutes. Remove steamer insert, and season broccoli with butter, salt and garlic powder. To serve, add chicken, rice, and veggies to a plate, and enjoy!
Tuscan Chicken & Spaghetti Squash - I did this recipe but used shrimp & sausage instead of chicken, and used a jar of Raos Alfredo Sauce instead of the heavy cream + parm in the recipe!

In the past, I struggled with an eating disorder, and I would “avoid” certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others, and it’s okay if there’s more of you to love than when you were younger ;)
