This Week’s Eats
Pork belly bulgolgi- pork belly marinated in bulgolgi sauce
Kimchi, lettuce, ssamjang, rice
Chicken Nuggets (Bare Naturals brand from Costco) + Veggies
Air fry chicken nuggets at 375 for 12-15 minutes, then serve with buffalo sauce, ranch and raw veggies (carrot sticks, cucumber slices, and cherry tomatoes)
Buffalo Chicken Ranch Sandwich
Air fry chicken nuggets at 375 for 12-15 minutes, and then toss in buffalo sauce. Place coated nuggets on a hamburger bun, top with a drizzle of ranch, and handful of shredded lettuce, and a slice of cheddar cheese
Burgers + Curly Fries
Season ground beef patties with salt and pepper, then cook in a pan with avocado oil. Cook for 3-5 minutes on each side, then add a slice of cheddar cheese, and place the burgers on a burger bun with mayo/ketchup/mustard, and pickles. Air fry frozen curly fries according to packaged instructions and enjoy.
Starbucks Copy Kat Spinach Feta & Egg White Wrap
Chop sun dried tomatoes then add to a pan with oil. Let cook until slightly browned, then add in chopped spinach, and season with salt, pepper, and garlic powder. Cook until spinach is wilted, then add in feta cheese, egg whites, and more salt, pepper, and garlic powder. Scramble the egg mixture until fully cooked, then add the mixture to a wrap or tortilla. Fold the wrap up and place in the pan until toasted on both sides.
Butter Chicken + Lentils
Make rice using a rice cooker or a pot on the stove. Remove the tendon from chicken tenderloins, and then cut the chicken into small bite-sized cubes. Add avocado oil and cubed chicken to a large pan or pot, and cook until browned. Once fully cooked, remove chicken from the pot/pan, and add in more oil. Add in shallot and garlic and cook for 1-2 minutes, or until fragrant, then add in a can of lentils, and a jar of butter chicken sauce. Cook for 3-5 minutes, then add the chicken back in and let the mixture simmer for 10 minutes. Add 2 cups of water to a separate pot and bring to a boil. Place green beans in a steamer insert, and place the insert into the pot of boiling water. Cover and let steam for 7 minutes, or until green beans are softened, then remove green beans, and season with butter, salt, pepper, and garlic powder. To plate, add rice, the butter chicken and lentil mixture, and green beans.
Peppermint Mocha Puppy Chow - I made another batch of this but I used Cinnamon Toast Crunch Cereal instead of Chex Cereal, and it is PHENOMENAL!
Recent Purchases
Some things I recently purchased that think are SO WORTH the money:
Our Place Perfect Pot- I have never been more in love with a piece of cookware! It is seriously the most perfect pot! If you or someone you know cook lots of meals at home, this is a great gift for the holidays.
True Grapefruit - You know I’ve loved True Lime packets for over a year now, well I just tried True Grapefruit this month and IT IS SO GOOD! My husband loves it so much too, we just bought the larger box haha
Sunzel Womens Workout Leggings- If you need an affordable pair of leggings for the winter, I very much recommend these. They are so soft and comfy, and they fit your legs and bootay very nicely!
Syrup Bottles- I have been LOVING making my own syrups this year! I never realized how easy and fun it was to do! I use these syrup bottles to store the syrups in the fridge and they make pouring out of the bottle much easier and mess free than a regular mason jar!
Quest Chili Lime Protein Chips- these have been my obsession all of 2024! They are so good and they have 20 grams of protein per bag, which is crazy! Such an easy and delish way to up your protein each day.
LaCroix Strawberry Peach - EASILY my favorite LaCroix flavor! If you haven’t tried this one yet, you have to! Plus it’s less than $4 on Amazon!
Thank you SO SO MUCH for reading this week’s newsletter! This newsletter is simply a way for me to share my recipes, and my love for coffee and food! In the past, I struggled with an eating disorder, and I would “avoid” certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others, and it’s okay if there’s more of you to love than when you were younger ;)
Drop any comments or questions below, and have a beautiful week friend!
