DRINK OF THE WEEK:
Starbucks Iced Horchata Oatmilk Shaken Espresso
1-2 tablespoons horchata syrup
3 shots blonde espresso
ice cubes
6-8 ounces oat milk
Brew espresso shots and add to a shaker cup or mason jar, with horchata syrup, espresso, and ice.
Add the lid and shake vigorously until the entire cup is cold to the touch.
Pour the mixture into a separate cup (if using a shaker cup/cocktail shaker).
Add oat milk over the top, and enjoy.

This Week’s Eats




1 lb ground beef
1 tablespoon taco seasoning
1 can refried beans
1 can nacho cheese
tortilla chips
guacamole
sour cream
lettuce, chopped
tomato, chopped
cilantro, chopped
pickled jalapeños
To a pan, add ground beef. Cook until browned, then season with taco seasoning and set aside. In a separate pot, add the refried beans, and cook until warmed, stirring often. In a separate pot, add the nacho cheese, and cook until warmed, stirring often. To assemble, add tortilla chips to a plate, and top with refried beans, ground beef, nacho cheese, lettuce, tomato, cilantro, sour cream, guacamole, and enjoy.

Homemade Pizza
pizza dough, pizza sauce, shredded cheddar and mozzarella cheese, italian seasoning
toppings: chicken sausage, canadian bacon, pineapple, green olives, sun-dried tomatoes
Blueberry Almond Cottage Cheese
Cottage cheese, blueberries, sliced almonds
Chaffles
3 eggs
1/2 cup shredded cheese
salt and pepper
hot sauce
OPTIONAL: fruit
Avocado oil spray
Whisk together eggs, cheese, salt and pepper. Spray waffle iron with oil spray, then add 1/4 cup of the egg mixture to the waffle iron and cook until crispy. Repeat until egg mixture is gone. Serve with your choice of hot sauce and fruit.

In the past, I struggled with an eating disorder, and I would “avoid” certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others, and it’s okay if there’s more of you to love than when you were younger ;)
