Drink of the Week
Iced Bourbon Caramel Mocha
Recipe (makes 1 serving):
•1 tablespoon Torani Puremade Dark Chocolate Sauce (plus more for topping)
•1 tablespoon Torani Bourbon Caramel Syrup
•2-3 shots of espresso
•1 cup (8 ounces) milk
•Ice cubes
•Whipped cream
Brew espresso shots then set aside. Drizzle Torani Puremade Dark Chocolate Sauce all around the inside of a cup and then add the Torani Bourbon Caramel Syrup and the espresso shots. Gently stir to combine, then add milk and ice to the cup. Top with whipped cream, and a drizzle of the Dark Chocolate Sauce

Dinners:
Trader Joes BBQ Teriyaki Chicken + Rice + Steamed Veggies
Add frozen bbq chicken to the air fryer, be sure to remove sauce packets. Add sauce packets, unopened, to a bowl with warm water and let thaw for 10 minutes. Air fry the chicken at 375 for 10-12 minutes, then remove chicken from air fryer and add to a bowl. Pour both sauce packets over the chicken, mix well, and add the coated chicken back into the air fryer to cook and crisp up for another 5 minutes. Cook rice on the stove or in a rice cooker. In a separate pot, bring 2 cups of water to a boil. Add a steamer insert into the pot, and add in raw green beans and carrot coins. Add a lid, and steam the veggies for 8 minutes, or until soft. Remove veggies from the pot and season with butter, salt, and garlic powder. To plate, add the chicken, top with sesame seeds, and serve with rice and steamed veggies.
Shrimp Pho
Slice a yellow onion into quarters and add to a pot with 1 tablespoon avocado oil, and 3-4 cloves of garlic (peeled). Let the onion and garlic char a bit and then add in a full carton of pho broth, and bring to a simmer. In a separate pot, bring water to a boil, and cook rice noodles according to package instructions. To the pot with broth, add in uncooked and peeled shrimp, and cook until shrimp turn pink. Remove onion and garlic from the pot, and discard. Add cooked rice noodles to a bowl, and pour the broth with shrimp over the noodles. Top with toppings: sliced jalapeno, bean sprouts, Thai basil, mint, cilantro, sriracha, and a lime wedge.
Greek Burgers
Add 1 pound ground beef to a bowl with 1/2 cup feta crumbles, 1/2 tablespoon dried dill weed, and a sprinkle of red pepper flakes. Mix together and form into four patties. Heat avocado oil in a pan, and add patties. Cook for 6-8 minutes per side, or until you’ve reached your desired doneness. Remove patties from pan, and place on a toasted burger bun with your choice of toppings: lettuce, tomato, ketchup, mustard, pickles, etc.
Salmon Fish Sticks
Pat dry salmon with a paper towel, and remove the skin, if needed. Cut salmon steak into 1-2 inch strips. Assemble three bowls - Add 1/2 cup flour and 1 teaspoon salt to bowl number one, crack 2 eggs and add 1 teaspoon salt (then whisk together) to bowl number two, and add 1/2 cup Italian bread crumbs to bowl number three. Heat a generous amount of avocado oil to your pan (about 1-2 cups, depending on the size of pan). Once oil is hot, take one salmon strip, coat entirely in the flour, then the egg, then the breadcrumbs, and place in the pan to fry. Cook for 3-4 minutes per side. Repeat until all the salmon has been coated and fried. Serve with ketchup/honey mustard/your favorite dipping sauce, and a side salad.

In the past, I struggled with an eating disorder, and I would “avoid” certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others, and it’s okay if there’s more of you to love than when you were younger ;)
