Coffees & Meals of the Week
My husband has family in town from out of the country, so most days we’ve been sharing meals with them. You’ll notice I didn’t do much cooking this past week ;P
Coffees/Drinks:
Iced White Mocha - My copy Kat Starbucks recipe (I’ve been using goat milk instead of cow’s milk and coconut whipped cream instead of regular)
Iced Sea Salt Chocolate Caramel Mocha
1 tbsp Torani Sea Salt Chocolate Caramel Sauce, 2 shots of espresso, 8 ounces milk, ice, coconut whipped cream
Diet Coke + True Lime - if you haven’t tried diet coke with true lime, oh my gosh beckyyyy you are missing out!!! I’m hooked, and I got my husband hooked. Ya need to try it; I promise it takes diet coke (or any soda or water) to the next level!
Sanzo Sparkling Waters - I am HOOKED on these! I love the mango, yuzu with ginger, pomelo, and lychee flavors. The only one I wasn’t crazy about was the calamansi flavor. These are asian inspired sparkling waters that have no added sugar, and have really simple ingredients!
Banana Milk!! I tried my first banana milk this week and I’m in love! I got lots of requests to make a coffee recipe with it, so stay posted for a recipe this week!
Breakfasts:
JoJo Coffeehouse - JOJO French Toast + Bacon
Fried Eggs + Bacon + Toast
Heat a pan to medium heat, add bacon, and cook until crispy. Remove bacon from pan, and place on a paper towel lined plate to allow excess grease to drip. To the same pan, crack in two eggs. Cover with a lid and cook for 2-4 minutes, or depending on your preference. Remove eggs from pan, and place on a plate. Season the fried eggs with salt, pepper, and Frank’s Red Hot Sauce. Toast a slice of bread and spread butter over the top. Add toast and bacon to the plate and enjoy. Optional: serve with fruit like an apple or berries.
Black Bear Diner - 2 Egg Classic Combo with Ham
Open Faced Breakfast Sandwich + Fruit
To a small pan, add avocado oil and crack in 1-2 eggs. Cover and cook for 3-5 minutes, or until you desired doneness. While the eggs are cooking, toast a slice of bread. Add toast to a plate, and top with thinly sliced goat cheese, sliced avocado, sliced deli turkey, and the fried eggs. Season the eggs with salt, pepper, and frank’s red hot sauce. Serve with a side of fruit like cherries, apple, orange, melon, berries, etc.
Ham, Egg, & Cheese Scramble with Crispy Potatoes + Fruit
Thinly slice baby potatoes into rounds - the thinner the better. Heat 1/4 - 1/2 cup avocado oil in a pan on medium to low heat. Add in the sliced potato rounds and fry until golden brown on both sides (about 8-10ish min). Remove crispy potato rounds from the pan, and place on a paper towel lined plate to allow excess oil to drip. Season potatoes with salt, pepper, garlic powder, onion powder, and chili powder. Dice deli ham and add to the pan with remaining oil. Cook until ham is browned. Crack 2 eggs into a bowl and add salt and pepper. Whisk with a fork, then add the eggs to the pan. Gently scramble the eggs, then remove from the pan, and place onto a plate. Add grated goat cheese, cilantro and franks red hot sauce to the eggs. Serve with sliced avocado, the crispy potato slices, and fruit/berries.
Lunches:
Tuna Sushi Bowls
To a bowl, combine 1/2 can of tuna (drained), 1 tbsp avocado oil mayo, and 3 tbsp sriracha. Mix well and flatten down in the bowl. Top with sliced avocado, sliced, cucumber, kimchi, and sesame seeds. Serve with seaweed snacks.
Busan Mart - Kimbap + Kimchi + Banana Milk
Dinners:
Rotisserie Chicken + Tortilla + Avocado
This was literally such a lazy dinner day! I bought a rotisserie chicken added some to a plate, heated up a tortilla, and served that with half an avocado. Protein, carb, and fat, DONE! I could’ve added a veggie in there but I didn’t have any lol.
Shwarma Factory - Mixed Shwarma Plate
Snacks
Power Crunch Protein Bar - I have really been liking these lately! So far I love the coconut cream flavor, lemon meringue, double chocolate, chocolate mint, and chocolate coconut!
KDramas I’m Watching teeheeeee
I just finished Something in the Rain and I reallyyy liked it. This show was sad throughout with glimpses of joy. I appreciated the realness of the drama and was happy they ended on a good note.
Crash Landing on You - I just finished this show last night and I cried like a literal baby. The ending was so beautiful. I absolutely loved the main actors and will be watching everything they’re in lol
Run-On - totallllll snooze fest haha I keep waiting for it to get better and it’s been painfully disappointing. I have like three episodes left and I legitimately can’t wait for it to be done.
Black Knight - I’m watching this with my husband and we both are so impressed with it! There’s only 6 episodes which is a total bummer but each one is great, I definitely recommend!
Feel free to drop any recs ya have in the comments! I’ll love you forever ;)
Things I’m Lovin Lately
True Lime - Duhhh! I refuse to drink water or diet coke without it. It is SO DANG GOOD! I add 2-3 packets to water or diet coke, and I’m not kidding when I say, finding true lime was the best thing that ever happened to me. I LOVE IT! Also, they don’t have any sugar or sugar alcohols, it’s just crystallized lime!
Wahine Espresso Beans (of courseeee) - use code katerinafaith for 10% off. If you like the Starbucks blonde espresso roast, you will LOVE these beans.
Handheld Milk Frother - AKA my bffl - truly the best $7 you will ever spend! This milk frother is perfect for at home cold foam, matcha recipes, refresher recipes, and mixing syrups/milks/coffees! If you don’t have one, I’m serious, ya need one!
JavaSoks - Duhhhhhh it’s hot as heck right now and JavaSoks make a huge difference when it comes to keeping your iced coffees/teas/or frappes colder longer! Use code: KAT15 at checkout for 15% off!
My Walking Pad - I work from home so I don’t get in much movement unless I do intentional exercise. I’ve been whipping out my walking pad and raising my desk to get in extra steps while working during the day, and I feel so productive. I just keep the speed low (around 1.0 - 1.4) so I can type and work on the computer and I’ve been averaging over 10,000 steps each day!!
This newsletter is simply a way for me to share my recipes, and my love for coffee and food! In the past, I struggled with an eating disorder, and I would “stay away” from certain drinks and foods I loved, just to be thin. I now have a healthy relationship with food and my body, and I understand all foods fit into a healthy lifestyle! It’s okay to love food. It’s okay to enjoy sweet coffee! It’s okay if certain foods bring you more joy than others.
